Half-answer: Stopped time may be effectively synonymous with inertia ceasing to be, so when time is restored, everything returns to a "zero-energy state", gravity becomes the only force acting on an object and they simply fall. Sakuya would of course be immune to this, and the knife-throwing suggest that when she's no longer touching an object, it remains frozen in space.

The reason they fly at you in the game is because you're actually flying straight up.

Not only do they come at you from every direction, but some of Sakuya's knives change direction after she throws them.

They definitely do not lose momentum when she stops time.

I don't think I've ever found out even a semi-official version of what the fuck, in practical terms, Kaguya's power is supposed to DO. Closest I've seen is "like Remilia's but over a longer time period" and that was based on a doujin too I think.

Most powers don't get much use, canonically speaking. Though they do act as gimmicks for a few characters' spellcards (e.g. Sakuya timestops and moves across the screen while you're frozen; Mystia blacks out a lot of the screen).

Kaguya uses her power in Imperishable Night to attack the spell that keeps the world nighttime, but that's about it.
