Is there a website that goes through real world manga and analyses every sentence? Hover over a word and it highlights the entire word, gives you the dictionary form and tells you what form it's conjugated in? Tells you what's a noun, what's a particle and the borders between. That would have helped a lot when I first started, if not I'm going to make it.

I doubt there are going to be any proper, especially "quality alternatives", to what you're looking for since those channels are all so very North American. Especially when it comes to music and films you're definitely going to find smaller channels giving their 感想 of a movie or album, but by and large the whole ironic meme filled review genre just isn't a big thing.
I'm not into game videos, so I can't tell you too much, but you'll definitely find some videos going into retro games and such however from what I've seen a lot of them are going to be text-to-speech ゆっくり解説 type videos. You aren't going to be getting your AVGNs.

depends on what you're reading.
sol anime/manga, ecchi harem lns, and moege will be extremely easy by the time you know at least 3k unique words.
for plot-heavy anime, you might need to mine another 5k words off them.
for plotge, you'll probably get past the 20k card point with no end in sight.

You can grind through a small core deck and/or try to pick up some of the most common kanji and words in some other way first, but 99% of learning words happens while "seriously" consuming the language, rather than before it. Get a basic understanding of grammar together first and foremost, without that foundation any words you learn are practically useless.

Figure out your own limits, it's consistency that's key. You need to keep at it and make it a habit to practice regularly, if you don't have the self-discipline for that then word amounts are irrelevant since you almost certainly won't make it.

i'd say 600 words off vncore and 10 pages a day off kim's guide is enough to get you started on reading extremely easy stuff like ななついろドロップス or ラムネ.
you can probably start reading furigana-full manga with the aid of a dictionary even earlier than that though.

Well if you are still a noob when you are way beyond N1 level and can read a least as many kanji as a native (or even more) and understand all media without any real problems then you should give up ever graduating from being a noob
