Remilia is most likely actually undead. Although vampires are called 'ki' (oni) in Japanese, this is merely a localisation. Vampires are almost never actually associated with oni in Japanese popular culture; instead the term kyuketsuki is usually present in works such as Castlevania and Hellsing, which involve characters who should be obviously recognisable for westerners as vampires such as, you know, Vlad Dracula Tepes (who Remi claims is her ancestor, but she's a liar who lies, so who knows).
Although vampires in Touhou do have oni-like traits, this is most likely just wordplay referring to the fact that, as stated, the Japanese word for vampire refers to oni. Notably, Akyuu never claims that the Scarlets are related to oni.
As for the princess thing, that can be metaphorical, especially in Japan. In Japanese, there are two words that are translatable as "princess", 'ōjosama' and 'himesama', both of which can be used to simply mean lady.
However, it is correct that it's not a septette. Although somebody should definitely make a remix of the song with a septette...
