You can use OCR, but it's not terribly reliable.

If you're doing vocab cards it's not too much of a problem since when the OCR does fail, it's not a lot of hassle to just type the word out instead (assuming you've got furigana to show you the reading for it), but if you're doing sentence cards or otherwise want sentences on your cards, you're best to pick a different medium to mine from (that's not to say you can't still read manga just because you won't be mining it though).

Even if I try to memorise them with anki I often can't recognise them in actual context because if I see them in my deck it's like "Yeah, I know what that character is, I added it to the deck three days ago", whereas in the wild I could just not recognise it because I know there are so many different kanji it could be. Unfortunately learning kanji without knowing the readings is pretty much useless, and while it can help recognizing some to understand the basic meaning of things you soon are gonna forgot what they means as it's unlikely you will see all of those soon and often enough, so you'll just see some symbol and think "oh, I know this one! at least I managed to fill in the big deficit caused by me deleting 3000 cards

you won't and the actual making cards part is the the least frustrating part of the entire process so I will outright dismiss the idea that a few seconds in the card making process matters whatsoever
and obviously the information on the card is very different, he has no sentence audio, the card is a sentence card which he simply copies without editing which can be very problematic, also he can't actually look up things while watching like you can with my method
