The easiest way is obviously to just walk up to the nearest cab and throw in a few credits to see if you even like the gameplay. IIDX is more unforgiving as you've got to put in quite a bit of money before it even becomes fun to play.

If there's nothing nearby you, the free entry is to get LR2/your preferred BMS player and some BMS to see if you even like the concept, before sinking a few hundred into an AC-style controller. On the bright side, you can always resell your controller to people if you find the game isn't for you.

I don't think anyone has had any real reason to do anything at this point. The game is barely a year old, I don't imagine many cabs popping up used yet.
It's also not something that you can simply just plug an easily available controller into a computer and play like IIDX or even DanEvo. It's not impossible to make an IR grid, but there isn't really any incentive to do it yet.
People are also probably a bit cautious about stepping on Konami's toes here, this game has a lot of licensed music in it.

Protip: Look up the soundtrack and listen to all of the songs every now and then for like a month, you can weed out the ones you don't like but this is so you can recognize songs and have more fun playing it. Worked for me for Gitadora. I had to get the songs individually (mostly ripped from YT) and add the details like artist, cover art etc. It also includes a folder with all the covers (cover art also helps identify the song faster in game).

I am doing a similar thing to you. I have a spreadsheet of gitadora songs by difficulty and I'm checking off the songs as I rip from youtube, listen to them, find the ones I like and play them. That way, I'm listening to songs around my skill level.
Never bothered to add cover art but that sounds like a good idea.

Because IIDX Daos are legitimately not that bad and people have done unnecessarily insane things on worse setups. I think there's something else wrong with your setup if they feel this bad to you.
