That doesn't change for Shannon and Kanon, they can still "die" and be unable to appear any further, but the "human" still lives. The concept doesn't necessarily have to be literal because the game master is the one creating the rules. Figuring that out is part of the challenge, and there is a reason for it.
The premise of the game is a battle against a witch. It's a stretch and a bit unfair because it uses a witch's logic, and that witch is the game master. However, there are still plenty of clues about this nature because the game master does want to be understood by having the mystery solved, but is too afraid to outright confess it.

It's fair if you don't like the idea and think it sounds too absurd. But the clues were always there.

Unfortunately that's not the case, it's just the fan translations making that adjustment. The officially published manga instead uses a different font for red and blue truths. It would be nice if the digital ebook version made the effort to color in the text, but I heard that's not the case.

I wouldn't put it past Ryukishi to technically allow it to be a possibility in some form due to fragments and enough people in-universe strongly believing in a certain theory to make it "true" in some form. But to claim that it's the real truth is ignoring the heart of the mystery, which is what Episode 7 tries really hard to explain the importance of.
I do wonder what the new chapter for Umineko Saku will be about.

From what I've seen the Japanese version uses 人 most of the time. At least I checked the end of episode 6 and the scene in episode 3 where it says "those 15 are dead" and I think maybe some other scenes and all of them used 人 even though the English would sometimes use "person" and sometimes use "human". 人 is just translated as "person" but I don't know if there's some kind of nuance that we don't get from that translation.

Yeah, the new english release came out a little over 2 years ago. Released on steam. Translation improved a ton. It's NVL format instead of the ADV that you have an issue with.
