One of my favorite things about the 2hu mangas is the implication that many of the characters drink daily and get black-out drunk at parties.

My guess is that they were preteens in EoSD, which of course still puts them in thier late 20's. However, based off of what ZUN said during that Q&A he did while in China it doesnt matter because regardless of how long the series goes and even in keeping the timeline 1:1 with real time, they will never actually age.

"Matured" is easily the best way to to describe it.
Ultimately though age simply isnt something ZUN cares about, and keeping a 1:1 timeline is mostly just a reason too occasionally incooperate real world happening into the worldbuilding too some degree. Realistically we can expect that (for example) Akyuu will never die and Sumireko will probably always be in High School.

While the Akyuu thing isnt so much speculation since ZUN explicitly said it, Sumi still being in highschool is just a guess on my part. Its very possible depending on how similar ZUN wants too make Touhou time too Sazae-san time. I could still see ZUN sending her off too college though, but I guess it depends if it ever becomes relevant. Basically the safe bet would be too assume she is still in highschool until its stated otherwise. Come too think of it, since ULiL came out in 2015 its likely she could have graduated already. We could also just say "She is a student", and that will cover everything. Touhou is still going too be around for a very long time and eventually itll reach the point where she should be graduating college too, but her being a schoolgirl will never change.

The problem with that is both EoSD AND PCB clearly went down even in canon, so if anything the reboot basically starts from EoSD.
