For me it's a tossup between Utsuho and Miko. Utsuho because after 5 stages of infuriating spell patterns she dispenses with the bullshit and just starts throwing stars at you, with a top tier boss theme and the sweet warning klaxons. Miko has some of the best build up in her stage, and the fight syncs up so well with the theme that it's hard not to love.
