I played three hanchans in ippan as a NoName to try to get a feel for how Tenhou works. I came in fourth in all three of those games whilst only winning one hand, my opponents failed to get any hands valued less than a mangan, and I got kokushi musou'd in the final game.

It can give you some hints, so yes, you probably want to pay attention to that. That can also mean poor connection, though.

Yes for tsumogiri, but tile position for hand discards are randomized IIRC, so you can't tell if those are from set or junk tiles.

It's not a reliable method at all. I'm pretty sure Tenhou adds random pauses to not put players with a slow connection at a disadvantage. I can't count how many times I see a tile get a long stop, and thinking someone had a pair and decided not to call it, I deal the same tile, only for it to pass right away without a pause.

Lately, I've been getting pissed at people who play very slowly, though, so sometimes I just let the timer sit for 15 seconds on a random regular discard just to throw people off and piss them off a little bit.

The biggest problem seemed to be time zones. Organizing it where half the people are burgers/leafs, a quarter are yuros, and a quarter from straya was very difficult. When a lot of people had less than 4 hours a day available on weekdays, it became a mess. So, damaten? Or yamiten? Or silent tenpai. Anyway, if a very dangerous or very safe tile comes out around the midgame you can start being more weary. Though sometimes someone will reach damaten for pinfu iipekou tanyao dora discarding only terminals and honors until t7 and there's nothing you can do but deal in at that point. But yeah, pay attention to their discards, watch for key tiles dropping from their hand.

My friend was on a family holiday to Japan and on the plane, there was in-flight riichi mahjong where passengers played against each other. With no knowledge of how to play, he and his brother got trashed. After the flight, they read up about mahjong and bought a mini mahjong set since the two of them + 2 parents meant 4 player mahjong was possible. With an actual set to play with, he introduced it to our circle of friends and so the 5 of us learnt how to play mahjong.

I got mindbroken during the last few weeks because one of my friends I play with was landing huge wins on me all the time and meanwhile I got either shit hands or got cucked by open tanyao, general bad luck and yolo playstyle to the point I proposed to go kuitan nashi and disregard playing strictly to the latest EMA rules today.

Kuitan has proper strategic uses with its own set of drawbacks and weaknesses. If everyone you play with only ever goes for quick trash hands then they're all just simply bad players. Besides that, kuitan ari reduces the luck factor of the game. In kuitan nashi, the fastest player is just whoever's lucky enough to get yakuhai.

I'd say much more stable than in Joukyuu. People are more likely to fold even against damaten so you can't really expect your crazy hands to pay off unless you get lucky with tsumo. Cheap suji traps also become way less efficient, and so far I've found that moderate 3-4han dama hands seem to be the most effective to build a steady lead.
You also can't expect your open hands to be fed easily. More often than not, if you give them a scent that you have something moderately big they'll just starve you out without giving you a single tile to call.

Is it normal to feel completely overwhelmed when first learning mahjong? I've read a handful of guides but I still feel like I have no semblance of what I'm doing when it comes to building hands. Yaku list is overwhelming, but the logic of the game is very simple: four 3-tile groups and a pair. You win by either completing the last 3-tile group or last pair using either your draw or one of your opponents's.
Honor tiles are very straightforward, and number tiles can either be sequence or block. So, if you have 4 and 6, 5 will make a group. If you have 5 and 6, either 4 or 7 will make it, etc.
Once you understand that concept, the game is rather simple and you can make decision in a snap. Later on you will also have to learn more complex stuffs like tile efficiency or defense, but the basic is just that.

I'm 2dan and I'm still learning new things that I forgot because they don't come up often in play

So long as you remember a few basic yaku like tanyao it's not too hard to move forwards.

Don't know about the others but what I like is the building rather than the winning of the hand. There's no guarantee of a hand getting that stroke of luck to win but how well I build my hand is within my power.

You'll eventually reach this but just something for you to think about.
If you have 34, a 2 or 5 would be able to complete the set while 24 can only be completed by a 3, this means having a double-sided 34 in you hand is better than a closed 24.
So how about 12 and 24? Which is better? Both only accept a 3 so isn't it the same? The answer is 24 because drawing a single 5 makes it 245, discarding the 2 makes it now a double-sided wait! On the other hand the 12 wait needs you to draw a 4 to make it 24, then a 5 to get the double-sided 45 wait.

It's this stuff that really gets me going. It's so mathematical and logical that I absolutely love it.

My friend declared riichi but he had an incorrect set of 235 if I recall, so we called out a chombo after his declaration of ron/tsumo. However, after we've already distributed his penalty sticks, another friend noticed that he's had a valid hand if we rearranged tiles. After we did that, he had iipeikou on hand and if I recall correctly, it changed to a pair wait win. Now here's my question, was it correct to continue with the chombo, because he declared ron on an invalid set or after the rearrangement and having found all sets were correct and it could've been a pair wait win, were we supposed to return his penalty and the person who fed the tile should've paid the hand value?

7s is a suji, go read up about it. I'll give you the quick version while we're here.
You know about furiten, right? If your winning tile is in your discards, you cannot ron anyone else with any of your waits. If you have a 25 wait, a 5 is in your discards and your opponent discards a 2, you cannot ron off of them.
Since toimen threw a 4s, it means that if he had a 14 wait or a 47 wait, he would be in furiten and cannot ron from you. It's not perfect but 7s is less likely to get ronned on.

As a general rule of thumb if I decide to discard a penchan I do it with the more middle number first. The main reason for this is are the 9s and 1s are in general safer cuts. Also it makes almost no difference in efficiency most of the time since you are always screwed if you draw the tile that completes the penchan.
