Correct stroke order means you can write kanji quickly and people will still know what the fuck you wrote. Poor stroke order will make your writing look unintelligible if you don't spend much time on it.

I didn't believe this until I tried it. Stroke order definitely makes a difference in the outcome, both because it makes certain errors less likely, and because it makes errors consistent across different handwritings. In a language with such complex characters, any method to improve clarity is wanted.

Two examples I found to be helpful:
亠 is written with the vertical line first. If you write the vertical line last, it has a tendency to poke through the horizontal line and become ambiguous with 十.
冂 is drawn with the left vertical line first, and a second, bent line flowing from the top of that. If you try to do this in one stroke, you often end up with a rounder looking character, and you have to do an upwards movement which feels unnatural and looks wobbly. Doing this in two steps makes it easier to form a square shape.

Of course, if you're a skilled writer/artist, you can do it in any order and still make it look genuine. In practice, however, you have to write those characters quickly, and this means you will screw up somewhere along the way.
