Funny, because playing other people's songs is much harder than playing your own ones. Unless you have a good formal training, you can't really compose something you cannot play yourself, so the end result is always constrained by your capabilities. On the other hand, playing covers more often than not extends said capabilities greatly, if this isn't rewarding, then I don't know what is.

Is it impossible that I might just... like the style of music that ZUN writes? I like how his songs mix strong influences from any number of cultures. And the fact that there are thousands of remixes only prove that I'm not the only one who's a fan of it.

There's just something appealing about the music. Something appealing enough for people to make "thousands of remixes". I happen to be fond of Final Fantasy music.

I also enjoy playing Mozart and singing Billy Joel. But I don't think their songs are as ... catchy... as touhou music.

ZUN's music has some interesting melodic ideas, that's his main appeal. And it's also the reason there are so many remixes, as people like his melodies, but feel that they should be portrayed in another way. Perhaps if he was a more skilled composer, he could arrange his songs so perfectly that there would be no demand for remixes, but it seems like he has other stuff to do than to master the art.
