There's a good argument to be made about Flandre's supposed insanity being mostly a result of her inability to ever properly socialize and interact with people not her family. With the mind of a child, she can't control her power well enough to not be dangerous. Because of that, she can't socialize well and she isn't really allowed to go out and do so. Because she can't socialize, her world forms around herself and she doesn't learn how to control her power. That sort of life after hundreds of years? Bound to get to anyone. She might be unstable and slightly messed up socially and behaviorally, but I don't think she's truly insane.
