Yes that's always the secret, you need to leave them slightly raw in the middle. Don't worry they will still be steaming hot and ok to eat but just much softer. That's the secret to making good bread too, very little browning. You want it as soft as possible without being mush inside. Hard to time right though, I just keep an eye on them the entire time.

the trick is to be gentle with it and do it on a low heat! at the beginning you can drag some of the egg out of the way so that you can get the more liquid stuff at the bottom.

a restaurant trick is to make your omelette in a completely ovensafe pan, then once the bottom is cooked,put all your tasty tasty toppings in, put in in the oven, then once its solid on top you can slide it onto a plate and fold it on itself really gently with a rubber spatula!


mostly just lots of practice! hang in there!

in short: be gentle! gentle heat, gentle touching!
move as much liquid to the bottom of the pan as you can while cooking! fold over gently!

It's just the Nestle Tollhouse recipe. Makes perfect cookies. I use a melon baller to scoop them onto the baking sheet. If I'm going to eat them all warm, I pull them out later so when they're warm they don't crumble, and if I'm going to eat them later, I pull them out earlier so they stay softer.

You got to let the butter warm up. Don't try to microwave it or melt it because they'll come out flat.

When I mean flat, I mean unappetizingly flat like this. In all the times I've baked cookies, the only time I worry about them is when the butter has been microwaved to room temperature. No amount of extra flour or leavening can fix these.

If you've got salted butter, it will stay good on the countertop for at least a week, which should give you plenty of time if you forget about leaving a stick or two out (or are just lazy).

you can look up recipes on the internet along with everything you need to know. there's also plenty of videos on youtube and similar sites showing you exactly what to do.

if you're missing something in a recipe you can type [insert ingredient name] substitute into google and read about some solutions others have used.

tips for looking up recipes. there's two ways i usually go about it.

first i look at what i've got in stock. if get the itch for sage then i'll think of other stuff i want to add. an example is like sage, mustard, and lemon fish (salmon). so type "sage mustard lemon salmon" into google and look around at a few different recipes.

another way is to think of a regional cuisine you want to make based off what ingredients you have. "pork loin chinese soup"

after you cook long enough you can just make your own recipes that suit your personal taste, but trying new stuff is always refreshing.
