What Remilia wanted was more than that. She wished for Sakuya to "always" be by her side.

However Sakuya intended to die as a human, in doing so rejecting Remilia.

Serving somebody for the rest of your life is more of a commitment than simply giving up a limb.

However even above that, there is still the absolute commitment of serving forever which Sakuya refused. Not directly, but it was refused nonetheless.

You're not thinking of this from the right point of view. In a human's mind, it's pretty hardcore like you say.

However in the eyes of somebody who will not die simply with the passing of time, Sakuya's choices would be an utter rejection. The leg which she gave up without reluctance, a simple condolence.

I can't deny that she privileged her humanity over Remilia. But, could you affirm her choice was that of "utter rejection"?, I think she is even more than willing to die for her.

But, I think I'll be discrediting myself having said that last part, because death can be either the erasing of the self, but also the "possible release from the confines of the self", thus if Sakuya became immortal she wouldn't be able to achieve said liberation. So, tl;dr I just realized she wanted to remain human so she could die.

The proposal of living forever is scary!. Anyways, I won't allow her loyalty to be questioned.

Dying for Remilia, I'd say Sakuya would be completely willing to do that, however dying in itself would be rejection towards somebody who lives forever.

To die for somebody and to live for somebody forever are two entirely separate things.

Sakuya's choice to live and die as a human in itself wasn't a rejection, however, for the situation it may as well have been one, even if Sakuya had made that choice far before she had ever known Remilia, that choice in itself is a rejection to those who live and will forever live.

If we consider Sakuya's loyalties as serving Remilia over herself and others, that one choice is the one way in which she does a disservice to her mistress.

Sakuya may have never meant to reject Remilia, but regarding Remilia's thoughts, what else would she feel?

Sakuya's refusal to take any measures to live beyond her natural years always kind of stuck out oddly to me. She serves her to such ridiculous degrees of loyalty it's hard to believe she'd shirk the thought of continuing it. It would help quite a bit if we even knew what brought her into Remilia's service in the first place of course...

Though I suppose you could consider the thought that it's a similar situation as >>10264287 's example includes. She doesn't want to live forever because maybe she's afraid she would come to dislike or even resent her servitude?

Oh, and then you throw in all the little hints and nudges at the idea that Sakuya is in fact much much older than she appears and lets on. That just throws a monkey wrench right into the theory machine.

I always thought that because Sakuya manipulated time, becoming immortal with Mokou would disable her from that power, as the Elixir removes the very concept of time form the user. In addition, Sakuya probably is immortal already, as it is hinted that she is hundreds of years old, and the fact that she survived her duel with Reimu in EoSD. Remillia explictly states that Sakuya is killed before the main fight starts by calling Reimu a murderer.

Wherever ZUN was going with this line, whether it was just Remilia being silly, or just some idea he had before he thought up the proper Spellcard rule about being non-lethal, it doesn't matter anymore. It's never referenced or implied or inferred or anything in ANY other material.

Hell, in the very first line of text describing her it pretty deliberately ambiguates about her true nature.

There's a lot of evidence towards Sakuya being very old, but you don't have to jump to Lunarian for that. Her ability is time manipulation, for crying out loud. Her ability keeping her young is far easier a guess than anything else. Second would be Remilia or perhaps Patchouli's doing, but even that's stretching boundaries.

Also, she can still be human yet have a very long lifespan, especially if it's related to her abilities. This is a dumb discussion though. Sakuya's lifespan and hurr Lunarian speculation are annoyingly futile to talk about.

One thing that's really irking me now that I think about this it, if Sakuya has in fact been using her ability to keep herself alive for so long, why did the subject of her mortality ever become such a huge thing in the first place?

As far as I've been able to find In canon the subject only seemed to have really cropped up in IN. Anything else at most talked about her seeming to be older than she lets on. In fanon though, jesus christ. It's gotten to the point that people seem to be getting actively tired of the played-out schtick.

Incidentally the Five Star Stories tanks just got reissued this past year in Japan in prep for the author finally getting finished with Gothicmade and going back to writing FSS which has been on hiatus for several years. The author of that dojin probably had just read the reissue, and thought that it would go unnoticed as most of the Touhou fanbase was either not alive or too young to read FSS when it was at its peak from 1986 to 1995.

All I'm saying is, in Sakuya's case, refusing to become non-human (which is actually a really specific refusal to become an immortal) does not imply "refusal to take measures to live more than her natural years". Especially since, having control over time, she has means to prolong her life without ceasing to be human, and, as you yourself noted, it's been hinted that she had already exercised that possibility.
