They can all transform into various shapes, but the skill and detail varies a lot depending on species. They probably can't increase their mass without taking in mass from their surroundings (like say a water source or a man they are mating with).

As for excess goo if they try to change into something smaller, whatever can't be compressed could be spread out into the ground or outright shed as slime jelly (the excess has to reach a certain critical mass before it can develop its own consciousness, before that its just excess goo).
