It's mostly because the vns drags a lot and a lot of the jokes/antics i enjoyed in the original gets tiring stretched over a 60-hour VN. With Ciel, I found her amount of tragedy to really ridiculous and felt unsesary. In the og tsukihme the thing that made me like Ciel was that she was a suicidal loser who did not care about the church and just wanted to kill herself to atone. in the remake, she is a badass who constantly goes out of her way to save people and I get the direction Nasu wanted to take her character but it's not interesting and I found myself kinda zoning out whenever Ciel was doing church shit. Akiha was barely in the vn so i can't judge her character until Red Garden. Acrued was done really well I just personally don't find her very interesting in either vn. Shiki is good it's just the bar for Type-moon protags is really high and he is less interesting than Mountain Man or Shirou
