In psychology, a scent is one of the best ways to boost your memory of something, or to make you think clearly about whatever you associate with that scent. It sort of makes sense that Satori, who's already very insecure about people to the point that she's terribly dependent on her ability to read hearts as a crutch in interpersonal interactions, would want to saturate the heart of someone she's interested in.

Imagine having a crush and being able to see, at any moment, what's in their heart, to see all the many people that are in the heart of any healthy person. If your crush is a socially healthy person (or even if they were in the past, even as kids), they'll have other people in their hearts. We already sort of know that people are like that and just don't think of it, especially when we're crushing on them, but Satori can see it directly, so she wouldn't be able to stop thinking of it. It's right there in front of her, after all, and she's too insecure to just trust people. People already get a little pain when they see someone else getting along with their partner a lot, so Satori's ability would take this little pain to an extreme, as it would exist at every moment, maybe even intimate ones.

Satori doesn't want to see other people in your heart. She's already troubled enough as it is, and she would truly be a tortured soul if she ever fell in love.
