To me, soul designates the amount of effort that went into production. When Takeuchi was drawing Tsukihime, he obviously went above and beyond his skill level at the time, challenging himself to draw people from different angles, in different poses and moods. Some of it might have ended up wonky (especially Akiha, boy some of her sprites leave a lot to be desired), but the dude tried, and you can see it plain as day. Compared to that, when you look at his FGO art, you can see how he went "welp, I need to draw this shite because no one else will, so let's just pull up Photoshop and see what we can do", and then after a few days of coffee and scribbles, the new Takeuchi servant is ready. There is no passion or effort, just work that had to be done.
And Takeuchi does try sometimes. Once in a while, I still see art that makes me go "okay, so he wasn't jerking off here, there's an attempt at something happening", but it's always fucking Artoria. He just doesn't give a fuck about anyone who's not Artoria.
