If you want to be completionist, play Higurashi first, but be warned it's also really long and the way it ties into Umineko is a little esoteric. I did Higurashi first and while I didn't regret it because it provided some cool Easter eggs, it took me longer to get round to Umineko because I was a little 07th'd out after Higurashi. As it turned out I liked Umineko a lot better too, so if the Higurashi setting doesn't appeal to you right now and you really would prefer to play Umineko specifically then I would just do that.

Umineko doesn't have a 'remake' per se, but it has been rereleased with voice acting, different sprites and an edited translation. I would stick with the original Witch Hunt translation approved by Ryukishi07, which I believe is an option with the Umineko Project version you can get from nyaa. However I played an old version from when the new translation didn't exist so you'll have to look into that yourself. As for the sprites, most people prefer either the original sprites or the PS3 sprites rather than the pachinko sprites you see on Steam. Again this should be an option with the Umineko Project version.

Some people will tell you play the original release without voice acting or any of the new sprites. If that's your thing then feel free to do that although I personally think the voice acting is exceptionally well done. I've never had any issue running the original version myself.
