Try something simple. Do a short one, maybe two or three pages, about a date you'd want to go on or a day in the life with your girl. There doesn't even necessarily have to be any dialogue. You could even greentext the basic outline if it helps you organize it in your head. If you're not sure, try for something grounded in reality enough that you won't get stuck trying to keep your fantasy consistent and worrying about the little creative details.

If you want to get a grasp on the flow and rhythm of writing, try to read someone else's story with a more critical eye. Watch for how they vary the length of their sentences and choose their words, or how they structure the progression from description to action within a paragraph. There's a science to the way written words flow, and the techniques you can use to make them more pleasant and easy to read.

The basic short story plot is generally 'monster girl and human boy do stuff together'. When I need to come up with an MG for that kind of story I generate a sort of 'character sheet' for them in my head. The other characters and/or human boy usually come after.

>appearance
>name
>3 major personality traits
>primary interest, secondary interest
>relationship with main character/love interest/human boy/other characters
>unique traits

You'll find that if you start writing around what you set on the character sheet, your brain will start to automatically fill in the gaps in between.
