Multiple weeks for a given profile most likely. Some of the Patreon posts that show behind the scenes stuff show how KC often goes through many iterations of a given monster before settling on a design, let alone the profile text itself.

That week of work may not be on just one profile either, but tweaking or researching others that may not be released for a long time. KC's mentioned some races that he planned for years before they were actually finished.
