Based on your examples I think I probably just don't find arranges of it often since they usually aren't in my favored genres of electronic and rock/metal. I also enjoy vocals more often than instruments so that might factor into it too.

Then it hit me…I was in gensokyo. This was the original Yuugi that I was following before I met her in my world. I was stuck in a loop. The Twisted and corrupted looking Yuugi leapt towards the original and all I could feel was a snap. Then I woke up.

Variable. Depends on the legend in question whether oni have any sense of cultural identity or not.
Not that surprising considering the whole oni myth is an embodiment of human fears and desires at the core, so whatever "culture" oni have varies depending on the time of telling.

I too am fairly new to touhou. I have been playing Touhou 6, 11, and 8. I havent beaten any of them yet though. IN seems the easiest especially when you play as Yukari. It feels like I am cheating with that assist I get from Ran. SA seems the hardest for me at the moment.

Is there any tips to getting a good foothold in this. Was there a game I should have started first? It seems that each touhou project is noticeably different from the next so I would not think you could play it the same.

Although on the more serious side, the size of the dishes is exxagerated in media - if I understand it right, the dish is in order to "display" a small amount of sake on a large area, since sake is supposed to be drunk in one breath.
But don't take my word for it.
