Interesting, since your criteria seems to stress scenario much more than the actress, maybe recommending some series might be more helpful.

To start with, the Friend's Mother, Mother's Friend, Mother's Best Friend, etc type of titles that almost all studios have some variation of should appeal to you. I think they almost always meet your criteria of a meek but interested mature woman who initially puts up some resistance (not because she doesn't like the guy but usually because she thinks it's wrong) but quickly relaxes and enjoys the sex. It's romantic but also taboo enough to be exciting, with lots of positions to highlight a formerly unsatisfied woman exploring her sexuality with a younger guy. I'm going to assume you know how to browse other entries in a series so I'll just give you one example for each.

A fairly new series from Monroe (a Madonna sub-label) that's been popular is the Aspiring Lingerie Model. The specific role/relationship seems to differ between releases (aunt, mother-in-law, stepmother, etc) but the premise is the young dude can't help but make a move on this mature woman who's seeking some validation and self-esteem with trying sexy underwear modelling. Light resistance to start but they usually get really into it once she realises she's still sexy and not the ugly sexless old woman her husband thinks she is.

An honourable mention might be titles from Takara Eizou (codes usually start with SPRD-) and also feature more realistic mature women (in contrast to Madonna/Monroe who often emphasise a more glamorous and dolled up feel). Their storylines often have resistance to begin with too (even if the woman showed interest/curiosity in the first place) before more romantic and passionate sex. There's a lot of friend's mother, mother's friend, mother-in-law etc type stories here.

None of these suggestions portray sex in an abusive or depraved light and I don't have any rape suggestions either since I don't watch any. Like you, I love the whole satisfying and "saving" an unfulfilled older woman fantasy.
