Personally I just enjoy doing battle maps and having a good map for hub areas, I used to do it for every location when I was new but it was tiresome and took hours of prep before each session, still takes hours but its much lighter unless I want to really have fun making a map.
A 3d map? i've done similar things to it before using blocks of the map sectioned off and revealed at certain times to create an illusion of 3d thats worked well enough. It seems like an interesting idea to try to do more with 3d though I might leave some of it to theater of the mind since I have a small brain
