People seem to forget that half of touhou canon is the way it is because it's part of a joke in some way shape or form.
Yukari constantly jobbing is just a joke to make the readers laugh a bit at the silly gap grandma acting foolish in her retirement home, and Remilia's ability is never shown to actually exist probably because it's in character for her to make some cool-sounding bullshit up on the spot and have to go with it until she gives up making excuses as to why she also jobs all the time.
