Touhou is cute and grim, I don't see why so many people have a hard time understanding that a series can be both aesthetically cute while also exploring darker themes and having more grim undertones. If you want an "absolute" answer then I guess cutesokyo is closer to canon (as the cute elements are generally at the forefront and the series more or less lacks real stakes in most of its stories), but the issue with most cutesokyo interpretations is that they end up being shallow and the characters often end up feeling incredibly flanderized. Still, it's closer to canon than the grimdark stuff. Neither really does the series justice though, and a better answer is that both absolutes are incredibly reductive.
