Chimata is not that kind of market god. You'll probably see her play the role of a generic market god in fan works, simply because it's convenient with such a character, but going strictly by canon, she's a god of "lunar rainbow markets", meaning special or rare gatherings where people buy and sell. ZUN probably had events like Comiket in mind, but I imagine that in years far past, she got the bulk of her faith during yearly farmer's markets, back when most people produced most of what they needed themselves, and buying and selling where rare occurrences that were worthy of special festivities, which she could extract faith from.
She had to seek refuge in Gensokyo precisely because our modern markets have made the transaction of goods a trivial affair and thus removed the sacred components she relied on for faith. Thus, most of the things you listed are the complete opposite of what Chimata stands for.
