Yes, Vita version removes a lot of objects and replace some (such as grass and patches of flowers) with textures. I didn't take a screenshot of the overlooking view of the town at the beginning of the game, but the town looks very empty on Vita version. Switch removed some objects, but areas still look dense overall.
