I recently bought mine for $800, normally would have been $1100+.
AirBNB seems expensive from what I've looked (used to be cheap from what I understand, but japan passed some laws a few years ago and they seem more expensive than hotels now), I haven't booked a hotel for this time, but last time I stayed in a decent business hotel for rather cheap. If you're really cheap you could stay in a hostel, but I don't recommend it because hostels are sketch and the people in them are unbearable (especially because it's japan so if you stay in a hostel there's a high chance you'll get stuck in close proximity to a bunch of chinese) I stayed in Ueno last time though, if you want to stay in Shibuya/Shinjuku you might only be able to get a shithole hotel for a decent price.

I wouldn't recommend skimping on food. There's no reason to waste your time on expensive airplane tickets unless you're a fat fuck, and there's no reason to get a fancy hotel room just to sleep and shower in, but eating shitty onigiri all day after travelling halfway across the world is pretty lame.
I don't recommend wasting your time going to Ichiran though, that shit was disgusting, would have rather eaten a cup noodle.
