I enjoy lighthearted fantasy kitchen sink settings in general. Touhou is wonderful because it has a very cute and fun setting. It's like a Saturday morning cartoon

The music is absolutely amazing. ZUN is an excellent composer and his music is great by almost any measure

The games are awesome and fun. Not just for their gameplay, it's the union of beautiful visuals (not graphics, more art direction and bullet patterns than anything), wonderful music (specifically tuned to the stage, so it feels like the stage follows the rhythm! very enjoyable), and intense gameplay (that zen-state you enter when you just "feel" where the bullets are going and stare at things glassy-eyed, registering things only through your peripheral vision, is just awesome to experience) just combines to make a really entertaining game

Also, the doujin scene really spices up the universe and music as well. Aside from producing interesting games and music in their own right, people like to put their own ideas on vague events and flesh them out, and it can be really interesting to read that sort of stuff. A good example is Strike Pattern's stories. At Chirei is fucking awesome and heartwarming

I love so many things about touhou!
