if the standard adult human dietary need is around 2000 kcal a day and the average adult human body contains 81k kcal, then, assuming a youkai was perfectly efficient in food storage or internal energy storage and had the same energy consumption as a human, they would need to feed on one person every month or two
even though most of the youkai in gensokyo are young girls, they are presumably more active than modern standards so that would cancel out the reduced caloric needs by size/gender
presumably, some youkai can feed on things other than humans, so they may not even need to feed that often at all. some youkai, like kogasa, we know feed off of something intangible (surprise) rather than actual physical energy so there is some spiritual calculation there that we can't do with biology
but if one knew the exact rate at which youkai needed to feed on humans, and the fertility rate within the human village, you could calculate the human:youkai population ratio. and if you had a solid figure for them that deviated from the expected value, then you would know how many humans yukari has to spirit away into gensokyo every year in order to keep the status quo
