I haven't read that many Touhou doujins, but I've just read a doujin story about Meiling (non hentai).
In it surprisingly she is not the abused weak sucker idiot as often depicted, but totally cool, smart, witty and awesome and with hidden power level and does her job properly fending off intruders to the mansion without even breaking a sweat. (I won't be surprised if she could even beat Sakuya if she actually gets serious about it.)

Please recommend me some more doujins with this "cool" version of Meiling (preferably non hentai). I find this version of Meiling highly amusing.
