check out page 91 for tweaking your image in the camera prior to taking a shot. My preferences are to bump up the sharpness to "4" contrast to "+2" and saturation to "+3"

Then check out page 99 for white balance, which can be useful when shooting under different conditions (daylight, tungsten light, cloudy, fluorescent, etc) The section on custom white balance may also be of interest if the above fail. All you need is a white piece of paper.

If you're feeling industrious, the "WB shift/bkt" section on page 101 can be used to fix (or create) a color cast or hue. With enough time you can use these settings to create more dynamic looking shots straight out of the camera.
