its a watercolor and thus tastes better than acrylics.
less opaque but you can rework on canvas more easily.

It re-activates with water. So its extremely hard to blend without muddying up your colors and values. It lends very well to optical blending, but this is hard, it can be a good exercise though. Also gouache dries lighter or darker than it looks wet, just depending on what you have on your paintbrush.

all these factors make working in this medium quite difficult. Its only benefits are that it dries faster than acrylic (which may not be a benefit) and It is not glossy, so it can be photographed easily. Literally the only reasons It was used in commercial illustration. It is a dated medium its advantages have been outpaced by technology.

It used to be the standard in commercial illustration almost entirely because it was opaque, and would photograph well. The lack of gloss was minor, watercolors done correctly have no gloss, and acrylics, if photographed correctly, have no gloss. Gouache was also used for it's speed, drying time, and more vibrant color as well.
Even acrylic white will turn transparent under strobes, if not handled correctly - white gouache won't. Gouache can also be more subtle than acrylics, in terms of hue, you can get an almost oil-like quality of color with them, whereas acrylics are too vibrant in most cases.

Blending with them is harder than with most mediums, but once you're taught how, properly, it's quite easy to not muddy your colors. This skill is rarely taught now, as digital has replaced most places gouache was traditionally used.
And, the cheaper brands changed color. The better brands stayed the same, wet or dry.

I like gouache and I only use titanium white, yellow ochre (not exactly tho, the pigment is PBr24), Cad Red and Cobalt Blue for painting opaque things on top of watercolor.

Pretty sure there are high quality acrylic gouache paints out there, I'd rather have paint that can be reactivated on a palette.

It exists, but it's actually just acrylic with matting agent.
