Here is a demonstration on hard vs. soft edges. The harder the edge means(as you probably know) that it suddenly goes from light to dark. This happens when there is a sharp change in the subject's surface like the corner of a square(see 1)). Ambient occlusion is also usually hard edge (see 3)).

No how hard is it you need to be able to to tell from the shape of the object you are painting and roughly how much it deviates from facing the light source or how perpendicular it is to the light's direction. Or if it is covered by another object that casts a shadow to it then the distance between the two objects is a good indicator.. This just have to be learned but you are already doing an okay job. Just practice it more, use real life studies or photo studies you will get it in time.

And we also have reflected light, or using multiple light sources to mix up everything once again but I will not talk about those for now.
