What do you do if you change your mind, or have to make multiple version with different color schemes? A lot of pros have to do that.

I'm not pro- or anti- any technique, but you can't do something poorly to prove the technique faulty. Heck, paintings of the Dutch Renaissance were mostly glazing.
Doing overlay doesn't mean you work with one color, not like your example. Even OP's example uses several layers of colors to achieve its effect.
