I think it's a lack of knowledge in anatomy. They have their own forms, and when you paint these forms affected by light, the detail should come by itself. You can also use something other than hard round to make micro details if you want. A lot of people fake details, too. Like pic related uses screentones and a few lines to imply detail. There's also "real" detail, like erosion of different kinds of rocks, so you could gather references of rock types and study them.
