Any resources on sculpting? What are some good video courses/books?
Also, how are these robot figures initially designed/created?

That stuff is reserved for anatomists and bioengineers (Even then, CAD is used more often)
Simply understanding the anatomy of the body and how it affects the surrounding is far more important.

Take a bunch of pics and analyze their color palette. Pick it out then note where they used what colors and for what.

Depends, a non-answer but it really does.
Some people just find a font they like (make sure it's legible and suitable), others handwrite everything because they feel it gives them a nicer effect, others turn their handwriting into a font (letter spacing can be difficult to get right though).
