Are you familiar with Masakazu Katsura? Left is his manga, right is when he wants to show-off.
Obviously, not every anime artist has grinded realistic art. Most of them didn't. But most of them are trash. The good ones did, though. You want to draw like Yusuke Murata, you need to learn your fundies.
Also, it's a matter of being able to draw something yourself. Fundies allow you to draw from imagination, copying reference doesn't.
