Visual studio, by comparison, is using about ~250-300 mb, and is offering vastly less functionality than my well configured eclipse install.

The other one is a full web application server, running a multi-threaded event driven system, which persists in memory (due to the data not being important), rather than in a database. This means it's not exactly a memory friendly design.

Sweet, LyX just finished downloading, so now I'll fool around a bit.
I also need to set up multiple languages support (I'm from Denmark), which apparently Babel doesn't do in XeLaTeX, but a package called Polyglossia.
Polyglossia doesn't seem to support asian characters though.

Can't help you there, but from what I've seen, arabic is fully supported without any difficulties, so danish specific characters shouldn't be a problem.
