homie idk how to really put this but you need to understand that the world doesn't revolve around you. I know that's a stupid ass saying, but you need to understand what context he is thinking about when relating Arch with usefulness. Yes, Arch lets you start from the ground up, but when you're having to set up systems or program software, what sounds appealing to the hiring manager (assuming he's talking to you in context of Arch not being useful for business), saying that you've set up a version of Linux with your own bells and whistles, or setting up and configuring a known and popular distro?
I think it's awesome that you get how to set up Arch, and I've been wanting to do the same thing. However, you have to understand that not everyone thinks that setting up the thing is useful in the office. It's like a one-and-done kind of deal, which I could hire you for just a month to do.
However, I wouldn't ever because fuck you for being so conceited that you can't see past your ignorance. I've learned more than my fair share from my old ass co-workers at my internship. Maybe you should consider doing the same.
