In my experience, as someone who has dated both genders, they're not very different.

I distinctly remember the guys I've dated as being over-emotional and very affectionate, submissive and they tended to think I have this psychic ability to read their minds.

The girls were kind of the same, but they actually talked about their problems instead of dropping a bunch of vague hints and hoping I'd get them.

I try not to blame the guys though. I think part of the desire to label everything has to do with wanting affirmation. If other people feel as you do, you can't be that weird/abnormal/whatever.
Not to mention that having like-minded people is always important but becomes even more so when you're looking for someone to date.

The part caused by insecurities would go away if homo-/bisexuality were more accepted, but then labels would still be useful for social reasons.

I do agree however that people tend to take labels way too seriously. Everyone feels a bit different about love and sexuality anyway, so labels should mostly indicate a general direction, not be an exact description.

One, I find the overall state of that person's individuality more significant; and two, I rarely form any kind of thirst for a consistent state of affection from anyone. In my experience, a lot of gay guys are extremely campy which I find fairly annoying. Attention whoring is such unattractive trait. One of the worst.
