The flipped upper never goes all the way to the waist area. Farthest it goes is barely past the ball.
This save time because you nail the midsole waist area in (stitching takes longer). You mostly want to protect the ball area from water leakage, anything past that is negligible.

At least 6 has a cap toe so you can get away with it if you need a formal shoe sometime, and most people will never care that it's a derby and not an oxford.
