Sorry to tell you Anon, but Allen Edmonds boots are memes. I've had two pairs of their dress shoes and one pair of their boots and they all wore my feet in weird places and fit like shit. The cork dissolves to nothing inside of them anyway. The boots are too long and pointy for someone on their feet and the shoes were too tight as well around the toes but the company is more and more obsessed with the pointy Italian toe look than a shoe that actually fits.

The leather at the achiles is sometimes reinforced. It will literally break down before it breaks in. Return them and go with a different company. You'll remember this warning if you ignore it and keep fucking with Allen Edmemes.

Those who own both MPs and IRs (or Blacksmiths),
what are the size conversions between the two? Redwings No.8 last have more toe room and MPs seem to be more low volume, so what's the translation of size between the two lasts? I've got W I D E flat feet (the right foot just slightly bigger than left), and with my RW Blacksmiths I'm an 11 with the left boot being slightly sloppy fitting, and I'm guessing it's because of the no.8 being narrow yet high volume.

I need some input before I drop $500+ on some MPs. I feel like I should go with 10.5 on the MP last, maybe even 10.

That's not a very good example.
Pic related, probably the most famous "high end" boot.

Grain makes it look more casual so you can wear it with more types of clothes. It's almost impossible to wear smooth shiny leather with jeans for example.
Grain also takes scuffs and scratches better, they don't show that much.

But grain is also difficult for the maker to click correctly, they cannot see the imperfections. So it may end up creasing really badly on the vamp. Good shoemakers can do a proper job here.

I'm not sure if I understood correctly but the toe cap and the heel stiffener ensure that there can be no stretching at the front and back of the shoe.

Maybe for very high end shoes with leather heel stiffeners it could work, but I don't know which manufacturers use leather instead of plastic.
For example Carmina ($500 shoes) uses plastic, and they're one of the best shoemakers around. Apart from TLB I doubt there's any other shoes under the $1k mark that use leather back there.
