Cockpit's jackets are softer leather than most others because they're not going for 1:1 historical accuracy, the pattern is accurate, but the sheepskin and horsehide is not nearly so inflexible.

Most companies take several measurments.
These jackets aren't bespoke and sized to you, but they will take arm length, back length, chest size, and waist size into consideration. Shearling is also a very thick lining material that is meant to mold to the user, you can request a smaller size and it would probably fit very well.
The biggest issue I ran into was the cost, almost all of the companies that reissue these jackets according to their Military contracts charge about a grand, to grand and a half.

That's why I sprung on a half price one my size, it's not a B3 like I had wanted, but meaningfully the RAF bomber jacket isn't much different.

Have a look at what's out there, Aero Leather, Eastman Leather, are some of the most faithful reproductions. Cockpit USA makes very modernized jackets.

Pic is a B6, a slimmer bomber jacket that prioritized cockpit movement over warmth, still toasty I bet.
