Indoeuropean mythology is not an ethnoreligion because the ethnic group spreading it actively eroded their genepool by mixing with locals.
Later forms of paganism hardly had the chance to prove if they were ethnoreligious because northern Europe had few sharp ethnic differences except for Uralic peoples in the east.

Light hair and eyes (indeed, light skin as we know it among northern Europeans today) only started to become common in the bronze age, likely due to sexual selection but also due to vit D advantages in more northerly climbs in the case of lighter skin. Lactose tolerance in adults, a trait much less common outside of northern European populations than you might think, also only became frequent around this time. Our late neolithic to early bronze age ancestors were mostly dark haired, brown eyed, probably roughly Mediterranean in complexion but it's hard to know for sure, and unable to chug milk. As an aside, they were also about as tall as we are now, taller in some places, and for some reason their iron age and medieval descendants would see a decrease in height. Weird, but there we have it.
