A little bit. Parts aren't as easy to find as they used to be (within reason, of course, they still made millions of them) and Rolex themselves cannot guarantee that they can service something that old.
Old DJs are really simple watches that anyone can service, but good watchmakers are fewer and further in between.

Just as a matter of convenience, those don't have a quickset date so if you want to advance the date by 3 days, you have to advance the time 72 hours.

As far as I know, the size of the cyclops hasn't changed, but depending on the angle you look at it, it can appear more prominent. It's my least favorite thing about Rolex but ultimately it's a small thing and doesn't bother me.

As for the thinness, thinner is always nicer, but I don't know of too many dive watches that are actually much thinner apart from the 38mm Bathyscaphe, which is a ridiculous 10.7mm thick. I'm sure there's others. I imagine some quartz-powered pieces could be made thinner.

But either way, the Sub wears pretty thin. It looks big on the wrist because the Oyster case is a bit cushion shaped but it curves around the wrist nicely. I'd definitely recommend people who are skittish about larger watches try one.

After WW2, the Swiss sent some old Sallaz brand polishing machines to Japan to help them recover their bombed out industry. Sallaz is pronounced 'Zaratsu' in Japanese.
(This, by the way, is the same way that the Japanese denim industry got started. Levis and other companies sent over their old looms.)

As for difficulty, it's not actually that hard. You have to train a worker on how to do it, but it's not like only master artisans are allowed to use the polishing machines.
Seiko has the old Sallaz machines, so they market the shit out of them, implying that it's the superior method of polishing.
