dont adjust the day/date from 9-3am/pm (when the day/date wheels are engaged). If you want to adjust during that time, you have to move the hands out of that zone 1st
dont adjust the time backwards, it'll put a lot of stress on the movement. (true for many mechanicals). But you can nudge it a bit backwards to "hack" the 7s26 and make the seconds hand stop
and of course the rest of the usual mechanical watch stuff applies
