The watch is a 1911 Le Modulor first introduced in 1995, one of the most beautiful 1990's-2000's luxury sports chronographs and Ebel's flagship model at that time. Yours seem to be a later, "facelifted" model available from around 2000, retail price would have been at around 4000-5000 euros.

I've set a max budget of 1000€ to spend on watches for the forseeable future. Basically I just go to the gym and work (desk job, business formal). Should I try to snipe one watch and wait for the perfect value offer and the dress it up or down with bracelets? If not clumsy, you won't bash or scoff it. But sweat will ruin leather. Metal band will be annoying during sports.
If it's mechanical, repeated shocks will damage the movement over time. Like when the bar smashes on the rubber floor and you still hold onto it.

I like these, the ana digi has so much charme.
The quartz movement will handle shock much better. So workout should be no problem. I would not do repeated, hard shocks like hammering with it, just so it doesn't rattle the hands loose. But that is just paranoia, usually quartz watches are tougher than we expect. Take care of it, it's a fun watch.
