the hked/"normal" seagull 1963 is different. There is no official maker for that watch. Seagull itself does not make that exact watch, they only have the reissue limited edition which comes in a different design. Theirs is called "1962 plan B", supposedly a design that was considerd but never used. (pic related) HKed's 1 is the most faithful to the actual pilot watch used in 1963, though I still like the normal 1963 better.

It wears better in person, its thin, i think its doable but could go any bigger lug to lug. The laco is the same lug to lug, now it is a big watch at 42mm but I love the movement and design. Ah the life of a wristlet.

Just stick with 36mm club, the gap isn't that bad between the strap and case and if your going to put it on a nato anyway. I buy used so its hard finding the 36 with display back and I think I'm so so on the orange on the dial.

Winding a watch is to tighten the mainspring, once it's fully wound the mainspring can no longer be tightened and the whole system should give strong and obvious resistance to anymore winding. To overwind a watch you've really got to put a lot of effort in to cause any negative effects.

Stowa marine is thicker, 50m vs lacos 100m WR. The laco is better value at half the price, i think it looks better with its crown, coin bezel and lighter printed dial. I was planing on picking up a stowa fliger anyway.

The black dial club is the one to get, the white dial 38m clubs hands are hard to read (no contrast) and 36mm clubs orange bands is ugly.

The bracelet is a big part of why I have any interest in a watch to begin with. There's loads of watches that I'd be thinking of buying if they came with a decent bracelet, I know the Seamaster bracelet is highly regarded but the 9 part links just look odd to me and the fake rivets on the BB58 are also a bit of a turn off, I get why they're there but I'm not really a fan. A simple, well made Oyster bracelet is ideal if it integrates well with the case.
It's nice to have strap options for a watch but for me a bracelet should be the default option (unless it's a dress watch, obviously).

There are many great introductory materials on American pocket watches and watch care by NAWCC chapters and various collector's site written by people more knowledgeable than me, so I won't get into that.
By your description you'll be probably looking for a size 18 or size 16 (you don't want to end up with a small ladies' watch). I'd look into pieces produced in the last quarter of the 19th century, better made, easier to service, parts are mostly still available, higher-end movements will have fancy damaskeening. You can use pocketwatchdatabase.com and other online resources for dating and details by maker's name and movement number. There were many US watch factories in the era, it's possible that you will want to something that was made in your state/area. Many dial and case styles were offered, you might want to get familiar with them to find out what you like. At that budget I'd be looking for a heavy 3-4oz coin silver case, they look and feel good, but rolled gold cases are also high quality. Silver-imitation materials were fashionable (Silveroid, Nickel Silver, etc.) but they are not that pretty. Your preference is a hunter but it's possible that an open face would exhibited on a pocket watch stand on your desk or the mantle would suit your needs better, it's up to you ofc.
You'll be looking for a piece that was recently serviced or at least runs and keeps time relatively well. PWs need servicing at least every 6 years if you want to run them, so you should calculate with its cost ($100-150) if you're buying a piece with an unknown service history. Restoring a dial is not economical at your price point so pick something that you can live with.
Don't overstretch your budget too much because PWs at this price point are not good investments (hard and takes long to sell them, especially when you've already paid a premium buying from a reputable seller).
